It's like how in Symphogear you're supposed to self-insert as Doctor Ver. In Shoujo you self-insert as the teacher berating the kids for enjoying the spring of their youth, or the NTR rapeguy creating drama out of thin air to waste half a year's worth of chapters, or the Dad embarrassing his daughter in front of her crush.

Personally I like self-inserting as the annoying dumbass male background character that exists just to show that the love interest "isn't like the other guys" by comparison

Women tend to template the main male love interest because that's what traditional romance for women does.
But they can make decent side-characters like Taira in Polar Opposites.
So it's really a problem of women having no mind to deviate from norms.

I think Shoujo got hit with the restriction stick sometime in the 2000s since 70s to 90s Shoujo was full of sex, dead minors, and various taboo topics that little girls ate up
Mangaka that would have written for old Shoujo seems to have migrated to Josei and Seinen nowadays
Apothecary Diaries, for example, would not have looked out of place in old Shoujo beside Fushigi Yuugi

CGDCT is basically an artificial genre built to extract pure cuteness out of highschool girls doing random cute stuff, and suck on it. Every single drop not wasted. Or you can think of it like this. Slice-of-life moments from shoujo get cut up, shuffled, and remixed into "mixtape" of SoL scenes, and that becomes CGDCT. More or less.Same thing happens on the shounen side. You get small pockets of romcom, comedy, and SoL moments inside battle manga, but perhaps less in the anime. Then you strip those moments out, glue them together, and suddenly you have a SoL comedy show (often aimed at girls), like Hetalia, Kuroko no Basuke's moements in their room (it's funny how they end the series with a SoL moment, not in the basketball court.)

But the biggest difference is camera focus. In something like Uruwashi no Yoi no Tsuki(romance aired last cour), the girl talk and boy talk scenes are fun, but the framing still stays centered on the FMC and MMC.The friends feel like droids or AI made to make the FMC/MMC cuter. The camera and the drama are fixated on them. Meanwhile, CGDCT and typical comedy SoL shows tend to distribute attention more evenly across characters, almost no hierarchy, no real center.

And honestly, the most annoying part of a lot of shoujo is how sickeningly sex brain they are.
