the thing is that most sex traits aren't actually immutable. Men and women have different bodies according to sex, but these differences are caused by sex hormones, and taking different sex hormones changes most of these features.
Men and women are different in regards to hair, skin, muscle, fat, bones, genitals, body odor, metabolism, fingernail toughness, arousal patterns, social behavior, and a bunch of minor stuff like blood cell counts, blood mineral levels, and various hormonal differences. All of these can be changed by taking different sex hormones, other than genitals which can't change after fetal development, and bone structure which can't change much past puberty. And that's because everyone has the genetic code for a full male or female body, and the only thing that determines whether your cells grow into male or female phenotypes is sex hormones. So if you don't think genitals are what determines sex but you do think there's some important unchangeable physical difference between men and women, what is it?

If your argument is there ARE consistent, meaningful patterns in human biology that we can use to categorize us into two sexes, BUT that these differences are either unnecessary(i.e. a penis, because a man whose penis was blown off with a grenade is still a man) or capable of being changed through hormone therapy(such as a trans man experiencing increased facial hair growth), then transitioning people are changing their sex because they are experiencing biological developments consistent with the opposite sex and only missing the parts that aren't necessary to be that sex, then that argument is very flimsy because it doesn't account for a very fundamental part of what sex is; the role your body was naturally developed to play in the reproduction of your species.
Yes, there are men who lose their penises, or are even born without them. And of course, there are women that cannot carry children. But despite their defects, the reason we note these developments in the first place, is because it is fundamental to our biology as a species, and all life, that we have the capacity to take part in the process of procreation. All life on Earth is part of a chain stretching back to the first single celled organisms that were naturally selected for the capability of creating more of itself, and human biology is no different in being hard-wired towards making sure everyone plays some part of the puzzle, either sperm producing or egg carrying. Even when these processes fail, even in the case of intersex disorders, science tells us where the body went wrong and for the most part where it was trying to go. When you redefine sex as a result of societal expectations, cultural understandings or hormonal side effects, you miss the forest for the trees.
