Assuming they do actually mean to protect customers' privacy...how can they make sure every single one of their servers is and stays uncompromised? Seems like a big task.

VPNs are not a proper privacy tool.

Your ISP knows when you use it, your VPN provider is logging everything, and the websites you visit know that you use a VPN.
