Nothing against them just adulting doesn't leave a lot of time to sit down and read a lot. But there's still things I can recommend. For starters the classics. Clannad is pretty much widely accepted as one of the best VNS ever made, White Album 1 and 2 are also pretty good and almost legendary as well. Those two are the Oscar winning movies of romance visual novels.
Aside from that I would ask you what do you want out of your romance? because things are varied enough that you can find VNs spliced with the thing you want. There's comedy, drama, scifi, fantasy, sports, even horror mixed with the romance.
If you just want straight vanilla romance, I can recommend the following: Making Lovers, Hoshi Ori, Hatsukoi 1/1, Princess Evangile, And one that is amazing but everyone absolutely forgets when making recommendations is If my Heart Had Wings

Yeah, the main problem you're gonna run into is the fact that such a story would be long, and as such it would need some sort of misunderstandings and the like spread over time to keep things from just being the relationship between both characters gradually getting closer.
You would essentially need to leave breadcrumbs so that the audience doesn't just get bored. That is the entire point of panty flashes for example, you know the scene, both characters stumble against one another, girls falls with her legs spread open, and we get a good look at her panties. bonus points if it's embarrassing like panties with a teddy bear pattern or something like that, she realizes what's happening and drama ensues. That's just the writers going "I know it's long, here's a little morsel, so you don't forget we're seeing lewd stuff and that shit is gonna heat up eventually, just stick with me here"
And one thing I forgot to recommend, check out Tsukihime if you liked Fate. It's significantly shorter and the romance there is better, at least on the Arc route, all the other ones are more standard Nasuverse romance stuff. Mahoyo is pretty great too, but there's no romance there, being all ages and all that jazz, so it's just magic circuit and true magic autismal bullshit.
