Probably makes sense if in the desert. Salted pork has little value and wouldn’t preserve as well as it does in colder European climates, and lard is completely replaced by olive oil and sheep fat. Pork in those times also had boar taint half the time: stinky odours and off-tastes from uncastrated boars that can only be removed by immersing in alcohol and vinegar. Moreover, it is often the case that alcohol is sold liberally in the black market in non-permitting countries with politicians and law enforcement turning a blind eye if not fully engaging in it.
