Probably not. An architect's dream is often an engineer's nightmare. I'm no expert but I doubt it's possible to support so much weight without having the castle collapse altogether.
Having said that, I'd so wanna see something like that in real life, even if it a few changes had to be made to actually build it... But that's never gonna happen, sadly. No one has enough money to even consider the construction of something like that, no ponyfag at least.

Man, I'd love to visit an MLP theme park irl. Canterlot castle would be too much to ask but I guess a replica of Ponyville with the most important buildings or something like that could be possible. Maybe you have some other ideas.

I bet it was ordered by Celestia after Nightmare rebellion because she didn't have heart to live in their old castle after Luna was gone. As for building itself, I think the foundation stones anchored to the mountainside were carved by earth pony stonemasons.

Find something to earn a billion dollar, and sign a contract with Hasbro to build it with like, a permanent convention there.
Not the Disney attractions but something more creative with real horses and ponies you can hug and ride. places where artists can meet, RL comedies, adult friendly spots and child friendly spots too. And a recreation of Ponyville.
