That was a dumb scene but people do not understand the depths of Sauron's hubris. As long as the ring existed, he was going to win in the long run. It didn't matter how many of his plans people foiled, it only delayed the inevitable. He knew nobody would be able to destroy the ring and it took a literal act of Eru for that to happen. Somebody who knows that their victory is inevitable is going to be sloppy.
