Dio had no logical reason to poison Jonathan's dad in the first place. His status in the family was secure, and Jonathan had made up with Dio and was planning to travel the world as an archaeologist, likely leaving Dio as the main inheritor of the Joestar household. Dio only did it because he's such a massive cunt that he can't even conceive of not backstabbing people.
