There's mods to make it harder but it's by far the most larp focused paradox mod so if that's not your thing you should probably just stick to CK2.
If you do want to retry a more hard run you could pirate the dlcs and start a run as a landless peasant. I had some fun making a peasant republic in the netherlands doing that.

Ireland is literally the tutorial. You may have done this with one leader, but when you die your land will be split between your sons and you will inherit Ireland only, probably with 1 county, and everyone will hate you and you'll have to put down several revolts. Hopefully by now you have invested in men at arms retinues otherwise you're fucked.
The most fun I have found in the game is playing as a viking. Norse Asatru is very fun. Everything else is kind of slow and boring, especially Christians. Which sucks because the game is called Crusader Kings.
What this game really needs is the societies DLC from CK2 and more magic. You can be a witch, but it's super rare and its not as game changing as the magic in ck2

The disinherit cost scales up and isn't really worth it when you can just claim your brother's shit if you really want it. If you're willing to "exploit," you can give spare sons a city holding so they turn into republican rulers who can't inherit, then just revoke it back if the intended heir dies early.

I remember switching from ck2 to ck3 for the first time. It was around the time that disease expansion came out. I chose William the Conqueror since even if I lost the war I could still do an epic alt history where I build the house of Normandie in France.

I started up the game, chose Willy, clicked on my army, right clicked on London, and in like 1 minute I was king of England lmao.

Societies and Magic its the worst part of ck2 along side with that aztec dlc
