I wonder. Does the game have extrasolar planets already, or is Sol the only system for now?

A few, but they don't have as fleshed out systems as Sol. Mostly you'll have either half a dozen basic planets and planetoids, or one gas giant with a moon, stuff like that. Part of the problem, I'm guessing, is we don't actually know for sure how many planets there are around these stars in real life, so they have to be made up, basically.

I am curious to know how deep this goes right now and how deep it plans to go.

When you take over another world, how are the borders formed? When rebellions inevitably happen, what parameters are relevant to the new state being generated besides maybe landmass? How does doctrine and culture of the state change as events transpire? Is any of it hard scripted? How in the worlds are they actually gonna get the AI to make both competent decisions and react naturally to the game state?

This entire project seems almost too ambitious to truly achieve, especially for an indie game, but it's captured my imagination for sure.
