A channel about Japanese entertainment media. I know this sounds close to what OP asked to avoid but here you get interviews with actual directors instead of being centered on some random e-celeb narrating a three hour retelling of the plot of shrek with a communist lense or something like that.

Came here mostly just to post this.

In more recent years they shifted their content to do interviews with big names from the video game industry, film & animation, manga, etc.
I like what they're doing now, but the old stuff where they would do more upbeat interviews with completely random fashion designers and comedy duos and other artists & creative types that were and still are relatively unknown

A channel that is officially licensed to show certain anime series. Some current/newer stuff like Shikanoko Nokonoko Koshitantan and Jigoku Sensei Nube, older comedy series notably all the different Gag manga Biyori, comfy sports anime, cooking/food anime, etc.. Even darker mysterious (but still comfy) stuff like Boogiepop Phantom. Some of them, mostly the newer releases, are on a limited release schedule however.

seconding these and I'll add:

Atomic Shrimp
https://www.youtube.com/@AtomicShrimp

The range of stuff he does videos on is both massive and usually fairly specific. Some things he does include cooking, foraging, tech/electronics stuff, scam baiting (fucking around with scammers), "Weird Stuff from a Can" where he tries... weird stuff from a can, or on rare occasions weird stuff from a box or "normal" stuff from a can, videos where he literally just walks around some countryside talking about the things that are there (mostly the English countryside but he's done ones for parts of Spain and maybe elsewhere too), various kinds of crafts, and to me maybe the standout, a series of sort of surreal horror shorts centered around a place called Slaughter Valley, they have a vibe I haven't quite seen elsewhere (although I'm not super familiar with "analog horror" which is what some people classify it as).

Todd in the Shadows
https://www.youtube.com/@ToddintheShadows

If you like any kind of music from the last 60 years he's probably done a video or several on songs from the genre. His bread and butter is supposed to be his pop song reviews (and even there it's not necessarily "pop" songs, they can be rap, country, whatever is charting), but he also does a lot of retrospectives on one-hit wonders ("One Hit Wonderland") and albums that killed careers ("Trainwreckords") and I have friends who don't give a shit about modern music who watch him just for those. He's a pretty funny guy, formerly of Channel Awesome/That Guy with the Glasses, but since that fell apart he's been independent.

Cathode Ray Dude
https://www.youtube.com/@CathodeRayDude

His older videos are all over the place but in recent years he's settled into a groove of long-form, in-depth, and also kinda funny looks at mostly some older pieces of technology that either very much should have changed things or that we should be glad never caught on. His politics are pretty left but they almost never come up, when they do it's generally a meme moment, and (I actually don't like this myself) when he draws conclusions at the end of a video he can actually sound conservative because his conclusion is often either "they don't make 'em like this anymore" or "they should make everything like professional equipment" (or "they should take more risks", which isn't so conservative but is bold, and which I think kind of speaks to the spirit of the 20th century, which is where a lot of this tech comes from).

Video game and internet video essays. Emphatically NOT slop.

IF NOTHING ELSE, and if you care about video games at all and are old enough to have seen the industry get shittier and shittier over time, WATCH THIS VIDEO:

A real history of video games | Pay to Win
https://www.youtube.com/watch?v=1X6D39Cd34k

It is the single best thing I've ever seen or read on the topic. It's not dumb, it's not ragebait. It's a legitimately intelligent examination of a lot of things that kinda get talked around by far less smart hacks.

(tl;dw: video games have ALWAYS been rotten and designed to wiretap your brain. They emerged directly out of the gambling industry. That period between the 1990s and 2000s when video games were "good" was really an exception that came from the unique circumstances of the time, shit like microtransactions skinner boxes dopamine hacking etc etc etc are really just a return to form)
