I rarely go out, but when I do, I'm usually with my mother, who refuses to let me go alone despite being 23.

When I am alone, I stay that way. No one talks to me, I can't talk to people. I do not drink and will never touch alcohol.

I don't really buy the introvert" and "extrovert" thing, it seems mostly situational. The first step should be getting your mom to stop sheltering you.
Tell your mom you want to go places alone, make it a hard boundary. If she's the type to guilt trip, DO NOT let her guilt trip you.

Don't try to argue against it, don't even engage with it at all. As soon as you say anything like "no, i do love you, but-" you'll just give her the opportunity to corner you and make it impossible to make your point. Just say it's your decision and that's the end of it.
