I just got a wheel of epoisses cheese from the grocery store out of curiosity. It smells fucking putrid, like cow shit mixed with smegma, and doing research online it's supposed to smell like that because it's washed in french brandy to encourage bacteria formation and it's supposed to be consumed at room temperture so it's creamy with a nice rind. How do i eat it? Do i just, dip bread or tortilla chips in it? It better fucking taste better than it smells, I'm no stranger to crazy weird foods but the smell is legitimately off-putting to me.

don't "dip" anything in it, use a knife or spoon to transfer it to whatever you put it on.

some crunchy sour dough bread or wheat crackers would be good. basically anything you'd put brie on would be decent for this cheese. if you're into wine I'm sure there are plenty of food snobs who would tell you what to drink with it so just search pairing suggestions online.

imported cheeses are awesome, I'm from Wisconsin, cheese is kinda our thing, and I'm surrounded by cheese production facilities. hell, I can buy fresh cheese curds at pretty much every gas station I'd ever go to. that said, a good imported cheese, like what you have, is a treat above and beyond what we produce here.

i usually just put the whole container in a bigger plastic container and seal it up.

Maybe you can incorporate it in recipes, thus using it more like an ingredient than the main dish. Like in some creamy, cheesy risotto, for example.

It's what I'd do with it, anyway. That, or just spread it in some nice bread

I thought about making mac and cheese out of it but I'd probably only be able to use a small piece of it with some cheddar or pepperjack to balance it out.
