I'm not sure who made the final decision overall, but it was absolutely retarded. Now Underwood Farms (original pepper farmers) have their own sriracha which uses the same peppers as the original Sriracha.

It's good on a lot of things but it just lands in the pantheon of sauces on my sauce shelf. Good, Asian Hot Twang good for certain foods, but not gonna be put on everything. Had a similar run to the Tapito/Cholua run and the Southern Boomer Assfire Cartoon Sauce run all of which followed the Indie Barbecue Sauce run about 15 or so years ago.
Just expanding American/Western tastebuds as their diets diversify.
Nobody should be putting Tabasco on everything when a burrito tastes better with Tapatio, Fried noodles taste better with Sriracha and St Louis Barbecue tastes better with Frankie's F**king Fortified Fire Fart Fluid Ghost Pepper Sauce

that's true and i also think this is a result of brewers that were new in the IPA rush becoming better over time. bombastic high alcohol dry hopped IPAs are like the easiest thing to make. it takes more skill to make something more subtle. maybe breweries are shutting down, but the ones that persist probably have more experienced and gifted brewers who have decided to make more complex styles. that being said, the nee IPAs i do see are more creative than they were 10 years ago.

I wish somebody would tell that to every single grocery store in my city. Years ago they all had pretty diverse selections. But now it's literally just IPAs (50%+), macro piss beer and seltzer. Nah, their pepper supplier only supplied peppers to Sriracha so Sriracha tried to fuck them over in order to increase shareholder profits (not even by a lot). The pepper suppliers stopped doing businesses with them and then Sriracha panicked and scrambled to find a new (and worse) supplier.

By the way I'm back and I just wanted to tell you that I started making my own Sriracha during the shortage. It might not taste *exactly* the same, but you can keep adjusting the flavor until you get it:
> Cover completely in White Vinegar and simmer together for 10 minutes:

> 1 Part Red Peppers
> Sugar (to taste)
> Chef's Salt (to taste)
Sorry for the crappy ratios. I think this is right. If you want more tang, let the ingredients sit together as long as you want. Just keep an eye out for mold, and make sure you get the salt ratio right.
Press the whole mess through a sieve to remove any seeds. You can blend it for a while if you want it to be smoother.
Sometimes I like to pump up the heat with more Carolina Reaper.
Another twist you should try, that I really like:
