On the simple side but I tried making focaccia recently and was surprised how nice it was fresh.
Since I like to bake sweets the absolute comfiest is when I bake something new and everyone likes it.

When I was a kid, every couple of months, especially on a good chilly night, my mom would put on a movie for us and make fried dough pizza. You just shape out maybe 2 oz. of pizza dough and deep fry it, top with a little sauce and some parmesan. She'd dice some pepperoni and mix it right into the sauce. She'd always roll the last 1/4 or so of dough into little balls and fry those too, toss them in some cinnamon and sugar in a brown paper bag so we could have "donuts" for dessert. Those nights are some of my favorite memories. Now, every couple of months, I do the same thing for my kids. Those are some of my favorite memories, too.
