I’m going to do this: I’ll whisk the egg with salt and a touch of almond milk, then I toss everything into a hot stainless steel pan with ghee, then as soon as the egg coagulates and slides in the pan I’ll fold it, flip it and transfer it in my plate so the inside stays as much creamy as possible, then garnish everything with chives and salt.
