I’m going to do this: I’ll whisk the egg with salt and a touch of almond milk, then I toss everything into a hot stainless steel pan with ghee, then as soon as the egg coagulates and slides in the pan I’ll fold it, flip it and transfer it in my plate so the inside stays as much creamy as possible, then garnish everything with chives and salt.

Because the white in the duck eggs cooks very fast and it’s super dense, way more than chicken eggs, so a touch of milk or even water helps smoothing it
