how long do these jarred peppers stay good for? I have an open jar in my fridge that's been there for over a month, maybe two. is it safe to use the rest or will I get botulism if I eat them?

i left an open jar in my parents' fridge in early 2024, just checked on it yesterday, seems to be doing fine. they don't eat spicy food and i developed a stomach or bowel issue that causes me pain 8-12 hours after eaiting it, so since nobody's going to finish it, i'm looking forward to see how long the jar will survive.

If the jar had botulinum spores in them you'd already have gotten sick from eating them. It's not something you have to worry about growing in your food like bread mold
I've used peppers that had been open for a year and they were fine. Granted they were pickled and therefore highly acidic but I used some calabrian chilis in oil months after I opened them and was fine too.

Honestly month or two is not a very long time and if you were picking the peppers out with a fork and not coming into direct contact with the peppers/brine with your filthy fingers you should be fine

You can't see botulism. Botulism only grows when there's no oxygen and when it's not acidic enough. It would just get moldy. If it smells fine and there's no mold it's likely fine, these things are usually processed to give them a very long shelf life.

If you're wary, toss it. If you have a day off, try a teaspoon and wait a while. Then you eat it teaspoon by teaspoon for another few months to be sure.

oh shit, this actually reminded me that I have a jar of Jimmy Peppers in the back of my fridge that I purchased on November 30th, 2021 and opened December 21, 2021 according to my records. I should probably throw them out tomorrow morning, fuck.

i have your answer OP since i had literally the same question. i've bought this exact brand a couple of times, the jar on the left, because i like putting this shit on my eggs. last time i did so i got sick and 'rrheal so i checked the eggs and they were good then i checked the chili jar and sure enough there was a white spot in there which looked like mold.

given that it's chili peppers stored in oil i didn't assume it could just mold like that so quickly. i had that jar for maybe a month tops upon discovering the mold and only kinda got 3/4 the way through it, whereas the jar i had before it i got all the way through it no issue. i scraped that jar clean and bought the next one.

since i'm not that conscious of not cross-contaminating jar with the same butter knife i use for toast i assumed that it was just mold from bread crumbs getting in there. so i twisted the jar shut and put it back in my fridge. it's been 3 months since then and i just opened it now since i saw this thread and yes the shit goes moldy and bad very quickly.

so i guess my takeaway is this:
mold can hide itself very easily in loose chunky sauces like this, so if you suspect you see even a little, throw it out
don't be lazy and cross contaminate it with your butter knife i guess? put only clean things into it. it's not like it's that hard to wash an extra spoon.
don't put the shit in the door. i've been noticing everything in my fridge door goes bad really quickly, especially mayo. mayo always gets me sick, within 5 days. milk never even lasted 5 days if i kept it in the fridge. i turned the fridge temp down a few degrees and started shoving mayo and milk all the way in the back and it holds way longer. i can get through entire jugs of milk and mayo now whereas before i always ended up throwing them out.

the door is really just for butter and mustard and various jarred stuff that rarely goes bad.
