Your average no name mandalorians doesn't seem any more skilled than the average clone trooper, maybe even worse than them, and this has been consistent in TCW, Rebel and the live actions shows.
Hell, in season 1 of Mando, a few dozen of them get killed by stormtroopers offscreen, in season 3, during fight agaisnt the pirate in Nevarro, several of them seem to forget about their jetpacks and stay pinned while being picked off by turret fire.
And then there this guy, who, while his brethren were on the ground struggling against pirates, just flew up and took a starfighter on his own.

That's because, up to the Clone War, Mandalorians was all what there was. Nobody else has a standing, breathing, military force that could compare to Mandalorians until the GAR was commissioned. Not counting the Jedi Knights.

I'd call this being a matter of being untested in actual combat scenarios. Unlike Din Djarin, the vast majority of the CoTW spent their whole lives in hiding. They were all greenhorns. We were very likely seeing their first taste of actual combat. In contrast to what we see of Bo-katan, Axe Woves and Koska Reeves in their appearance in season 2 where we clearly see how much more experienced, cohesive and trained they were. Even to such the extent that Djarin was displayed as a 5th wheel to their group.

Everyone's built up this "potential Talon" in their head, but the show telegraphed it pretty hard that Lawson will tell her that Maul betrayed Daki, and she will leave him and will redeem herself. I hated it when I first heard about it, indeed she already had so much going on that adding being a Jedi on top of it felt really wild and unnecessary.

But I've come round on it. As of late Star Wars has been leaning into the idea that potentially anyone can learn to use the Force given enough training, it's just a lot easier if you have a high midichlorian count. Sabine doesn't (Huyang emphasizes that she is the least Force-skilled person he's ever know to be a padawan), so she needs to do a lot of extra training to compensate, and I can totally see her signing up for it precisely because she has excelled at all these other things previously and so she thinks she can tackle Jedi training too. Except of course she can't, not at first, and it takes her however many years and a journey to another galaxy to finally manage as much as a Force push. That's not too outrageous of a result, and having just recently watched Ahsoka it didn't feel unearned to me. Though I think it would have helped if they actually showed us some of her initial training with Ahsoka before they split up instead of just mentioning it.

I feel kind of bad for the High Republic.
The High Republic definitely suffered from the fact it's really big media project (rather than side novels or comics) didn't even factor into what the period was ostensibly about. Namely getting to have the Jedi do some *actual* heroic swashbuckling stuff rather than being "dead" or "in decline". It also didn't help that it really wasn't even a particularly greater take on the idea of corrupt Jedi doing corrupt things cause they're so flawed.

I always assumed they were all just Zabrak/Human hybrids where the males always came out Zabrak and females all human...somehow.

Look, I get it, the actresses fuck behind the scenes. But onscreen their characters have fuck all to do with each other.
