There were three different cyclopean girls who influenced my love for cyclopes. The first was Hitomi from Devil's Candy - it relaunched as webcomic in the mid 2010s, but I remember reading it as a short story in a Tokyopop anthology. Later on, it was Iris from Ruby Gloom - I really loved her spunk.

But the one who really cemented my love for them cyclopes was Nurse Hitomi. Those first few volumes were really special, especially when read with the earlier volumes of Monster Musume
