No last great war at the end of Antiquity, Khosrow II just let's Roman politics play out or at the very least capture a some vital forts but doesn't get too greedy and attempts to recreate the Achaemenid empire. Even if the Persians won they would be exhausted/over stretched and arguably do worse than in our timeline. Persia was more interested in Arabia than Rome so if they saw the Muhammed growing in power they could actually stop/manage it instead of being distracted. They did stop Axum from building an Arabian empire despite it being on the other side of Arabia so this wouldn't be difficult as long as they aren't distracted.

Zoroastrianism was never the 'dominant religion' in terms of having mass appeal. The real question is how did vedic religous thought manage to survive in india, despite beung centered around concern for oppressing the majority of its followers?
