The concept of polish nationality was different in medieval and early modern poland. Only members of the szlachta were considered Poles, while the peasants were considered to be something else. So a ukranian speaking noble was considered a Pole while a polish speaking peasant wasn't.
Did a similar concept of nationhood exist in other european countries?
IIRC Hungary was similar in this regard.

IIRC the situation in the areas annexed by the russian empire, not much changed for the commoners.
But the commoners living in areas annexed by Prussia and Austria welcomed the change and became loyal to their new masters. The only people who complained about the annexation were the nobles because they were mad they couldn't treat the peasants as slaves anymore. IIRC This is also why so many polish uprisings failed. Most of the time the rebelions were led by members of the szlachta and they weren't able to get widespread support from the commoners. After all why would the peasants want to fight and die for people who despised them and wanted them to become slaves again?
This started changing after the spread of nationalism when the concept of Polishness stopped being limited to members of the Szlachta

Not exactly. The medieval poles also committed several pogroms on the Germans living in Poland during the 14th century, one of them even led by their king, so thet had wider definition of a Polish person than just "a noble".

IIRC this under Joseph II. the szlachta lost many of their privileges and the peasants gained new rights. But after some time, I don't remember when, the austrians gave the polish landowners more privileges to appease them.

This concept was common until more modern times, and maybe still exist among super wealthy, nobelmen from different nationality and sometimes even cultures considered themselves closer than to commoners of the same nationality.
They usually shared a common elite culture, court life and education.
