It's easier to think of it as less "plural", and more "non-singular". It's a quirk with how English deals with numbers. The only number that takes singular marking is "one", because if you think about it, that's the definition of what "singular" means.

Although I knew it from exposure, reading this was the first time I consciously thought about と and で as different types of "with" and in terms of animacy, it's an interesting way to think about it. The reason for having いる and ある starts to make more sense to me.

Tell me the meaning(s) of your country's name(s)!
Japanese has a lot of names for Japan.
>倭 [wa] / 倭国 [wakoku]: 倭(dwarf, barbarian) + 国(country, nation, state)
>Meaning: country of dwarfs.
Note: This is the former name of Japan until it was renamed as 日本.
Ancient China called Ancient Japan like this because they considered Japan to be barbaric and non-civilized.
>大和 [yamato]: 大(big, great, large) + 和(harmony, peace)
>Meaning: nothing in particular
Note: 和 [wa] is a homophone kanji for 倭 [wa] but with good meanings, so 倭 was replaced with 和 over time, which is why this name for Japan doesn't have the particular meaning.
>日本 [nihon / nippon]: 日(day, sun) + 本(origin, root, source)
>Meaning: the sun's origin
>日の本 [hi no moto]: an archaic way of saying 日本.
>Meaning: same as 日本
>日出づる処 [hi izuru tokoro]: 日(day, sun) + 出づる(appear, show up, come out) + 処(land, place, location, site)
>Meaning: land of the rising sun
etc.

Spain - Traditionally thought to derive from a Phoenician *𐤀𐤉𐤔𐤐𐤍 (*ʾyšpn /*ʔī šap̄ān/, literally “island of the hyrax”)
In journalism or literary contexts it's also called "bull skin" piel de toro because of the shape of the Iberian peninsula

So, I'm learning hiragana, but I just discovered that katakana and hiragana are phonetically the same! Would combining both characters on my flashcards be a good idea, or would it be better to keep them separate? I haven’t been dedicating much time to my studies, so I’d basically be learning them at the same pace if I did this. Would that be better in the long run? Also, to become more familiar with Japanese in general, would Chiikawa raws be a good read for beginners?

How you structure the cards is up to you really, though it's generally recommended one card = one unit of information to remember
You could also just grind them out with this, that's what I did in the end instead of anki

I learned over 1000 kanji in less than 2 months and now the visual novel I'm mining hardly gives me new ones every day. The dopamine rush of finding shiny new characters to memorize is gone and I'm dealing with different pronunciations of the same characters which is arguably even more painful. Mining got really gruesome but I don't think I will give up. Once I'll be able to read vns nearly flawlessly I'll work more on output. On the good side, I'm learning grammar together with vocab.

I would keep it separate. It seems that people commonly only start with katakana after having solid grasp on hiragana to avoid confusion. Katakana is not immediately that useful on the beginning too.
Also check out the djtguide kana game and other forms of grinding this. It all really depends on what works for you. Some people have great results physically writing it using practice sheets too. I personally had most success with the kana game and even wrote my own version that introduces new kana/chooses which to repeat based on some heuristics of your past mistakes.
