Thomas, Philip, the Apocryphon of John, and the Hypostasis of the Archons are the ones I've found most memorable. I recommend these translations:

Legend has it that the Gospel of Truth is very well-written in the original language, but even the most readable translation I've found of it for free online is difficult for me to parse. Still, it's interesting enough:

Pistis Sophia was known by the public before Nag-Hammadi, but it was actually written centuries after the books of NH (especially Pistis' books 3-6).
It was probably the last great Gnostic book written before them dying for good as a religious movement.

Essential books to have a good grasp on gnosticism:

Also some other important books:
