Give me a reason why I shouldn't buy a Chevy Express to drive my family around in, instead of a minivan or crossover.

Theyre very uncomfortable (seats are designed for road crews & prisoners).
Climate control is only for front seats and the rear just gets what drifts back.

NVH? yes. everything rattles or is hard touch materials. the ride is worse than a pickup.

they are good at 3 things: seating 8+, running forever, and being mildly inexpensive. but a Ford Transit is a substantially better vehicle for roughly the same price

Owner here, very much a fallacy. with the doghouse off it's so easy to deal with. You even have a nice comfy seat to sit on while you're doing it, even under the hood there's plenty of space. The duramax 6.6 diesel's that came in a few of them however is tough It's a really really tight fit.

I've driven lots of the cargo variants and they're pretty terrible to drive in town. Maybe the windows on these make it better but these always feel a lot bigger than they are. My Suburban feels like I'm driving a big wagon in comparison. They're also terrible in the winter at least in an open diff fleet spec with shitty tires. You're definitely going to want the G80 and some real good tires and a lot of weight over the rear axle if you're going to drive in slippery shit. Also don't listen to people shit talking the seats. While they're not GMT800 tier they're still much more comfy than most modern rock hard seats, at least the 2 front seats. The rear seats are probably good enough for your kids.

Gas mileage, maneuverability. That's about it. If you don't mind paying for gas and you can deal with it being huge then its great.

Gas will be bad but not unbearable. People with the 6.6 and the 8 speed seem to be getting 20ish highway. City will obviously be worse but it definitely won't be 10mpg. Considering it's a 400hp full sized van that's not bad.

Make it a van conversion and you're right on the money, the comfort is night and day vs the rental-spec passenger van. They do make 'flat top' conversions if things like parking garages are at all a concern, too.
Luckily since these haven't really changed in years, you can find one that's a few years old and depreciated a bit and you'll still be good to go. Fleets regularly run these 500k+ miles, some examples going 800-900k+ without a rebuild, so buying one with a few miles on it shouldn't be a big deal. I'd just recommend sticking with a 2500 especially on the older ones, since you get a stronger transmission (older 1500s had the 4Lslippy, 2500+ had the 4L80) and axles.
For the few things that actually go wrong in these, like the oil pump pickup tube or spark plug changes (with those rear-most spark plugs being a PITA) the doghouse design has plenty of advantages. For anything else in the front like belts, there's also a load of space once you remove the large plastic fan shroud.

Do you have a double length back with extra articulation? I'm no stranger to removing the doghouse to work on Express van engines and you basically have to lay stomach down on the floor.

A chevy express 3500 averages 12 mpg. Its a truck with a van cab basically. You dont buy this unless you actually need something like this.

A minivan can average 23-26 MPG and still have 300 HP V6 and also way more comfortable.

unless you're one of those weird families with like 7 kids I dont see the point in something egregious like a Chevy Express.

12 MPG CITY (and I'm suspecting that's a previous gen with the 6 speed). A non-hybrid minivan is not getting over 20 in the city. An Express can easily tickle 20mpg on the highway.
