I used to worry about kcals/oz and macros, now I just eat whatever I know I'll be able to stomach while out of breath and tired. Some examples are shortbread cookies, peanut m&ms, ham and cheese sandwich with avocado and hot sauce and buffalo chicken tender sandwich with blue cheese dressing. As always, winter is peak since you can bring perishables without worrying about the cheese going bad or anything in the heat..

Just a simple grain-chocolate bar during the way up and some nice dried meat, cheese and rolls on the top, usually.
I recently did a bad-weather mountain hike in a light snow storm and had some vegetable stew with egg in a thermos with me. That's the life, I tell you.

Hardtack has been a good snack to bring in my experience. You munch on it while walking, good source of carbs

You can put a 1 pound steak cooked medium in a zip lock bag and chew on it all day. Raw potato and steamed broccoli are good side items.

Just boil some water then chuck it in.
Titanium is notorious for being difficult to cook with. I've heard people say this is because of it's thermal conductivity, I've heard other people say that's a myth and it's actually just how thin titanium camping cookware is. In any case, it's easy to get a hotspot in the middle of the bowl/pan which burns anything in the centre but leaves the edges of the bowl raw.
Use more oil, turn the heat down, stir constantly and pray.

For lunch (only really on the first day if it's a multi-day hike) I like a big sandwich with lots of butter, thick slices of ham, honey, black pepper, brie, and maybe salad or bell peppers.
Cured sausage and a few glugs of aquavit for when I reach the goal of the trip.
No, the real treat is a petrol station burger (biggest they have, no fries) and a bottle of ice cold Coke when I get back down. Sit down on the bench outside and eat it sensuously.

If I fill my 1 lite shaker bottle with a bag of this (saves space), that's enough food for 2 full days. Ever tried this stuff? Leaves a bitter taste but you feel a GLOW as it starts to digest, it's packed with protein, vitamins, nutrients and minerals.
I always take it with me, usually I'll have it for breakfast. There have been times when I forgot to get enough food, or I ran out and needed to walk a while to get more - this stuff was always on hand to fuel my efforts.
In a situation where you want to go out innawoods for months at a time you could carry a few bags of this (each bag is 30 meals) and be set for a long long time - just add stream water.
I just ordered a load more earlier in case things really get bad here in England, which they might. I can stay very healthy on this stuff even if my heart would yearn for real food after a few days. I've put a few bags in the back of my mother's canned food cupboard as well, then we're set.

Whey protein is an underrated prep for shtf sorta stuff but do NOT plan to live on it alone. A pure liquid diet fucks up your digestive system.
For non-disaster purposes I often take a container of BCAA powder with me on mountaineering trips or long trips in developing countries. Provides a great way to boost your protein intake when AMS has fucked your appetite or if you're subsisting on rice+beans from local villages. The performance boost is real.
You could use whey protein or other meal replacements but BCAAs are much more enjoyable when mixed with water and that makes a difference when you're trying to force yourself to get enough calories+protein to keep moving. Some of the new 'protein waters' are similarly palatable so I might switch to them but they are often composed primarily of hydrolysed collagen peptides which are unlikely to be as beneficial as BCAAs or a complete protein like whey.
