Imo they're a very fun tag team but they're still kind of green. By far their biggest problem is that a lot of their branding is based around being third (?) generation rudos, calling themselves "lucha's guilty pleasure" and so on, and they're VERY mild as rudos. To put it this way: if Soberano Jr is 50 Shades of grey, the Calaveras are Twilight.

And their booking fucking sucks. They keep being put in feuds with other rudos so they end up feeling like técnicos with extra steps.

There are currently two different networks going using the brand "Fox" in Mexico at the time because of corporate shenanigans.
The short version is that Fox in Mexico got split in two. One company is entirely Mexico owned and managed, this is the one AEW (and now CMLL) is on.
The other one is managed from the US, this is the one AAA is on.
As for which one is "better". As of right now the Mexico owned Fox is in more homes while the other one is just starting, so currently AEW/CMLL gets more exposure than AAA. But this wont last long because that company is a very dire situation as they have been bleeding content since the split since they don´t have the backing anymore. Like half of their programming is Dynamite and Collision reruns because AEW is the only thing they have left that people actually watch. While the other Fox has bigger money behind them so they are expected to grow fast.

People can seethe all they want about Kaiser but he simply took advantage of the complete technico wasteland that was AAA.

We don´t know. Ratings are not public in Mexico so we can only speculate.
In any case, historically speaking, ratings don´t really matter for wrestling in Mexico. While in the US TV rights are wrestling´s strongest source of income, in Mexico is ticket sales. As a matter of fact, promotions are actually the ones who pay for tv channels to air their shows, to try to get people to but tickets. But again, this is how its has been historically, no idea of the current AAA and CMLL deals are like this.
