In Z1 Nick turned around and smiled because he had overwritten his tax evasion confession that Judy was using to keep him invested in solving the case (until he became invested in it himself) with the "I really am just a dumb bunny" line. In Z2 at least some of Judy's surprise is probably due to overwriting the Dumb Bunny line with something Nick feels embarrassed about - "Love you, partner."

I think Nick said that line on the spur of the moment, and the instant it left his lips he thought SHIT, BETTER SAY SOMETHING CHEEKY AND UNSERIOUS to undo some of the impact, but Judy caught the good bit on tape. If you watch her facial expressions during this scene, they give away a lot - right after Nick says he loves her, then when she realises she got it on tape.

Oh damn, I forgot about that. Well, even if it doesn't overwrite itself, it wouldn't take much to store multiple recordings. You can get about 8 minutes of audio on an 8 megabyte flash chip (which costs almost nothing) with MP3 at 128kbps, and I think we must be on around 2 minutes of audio, max. ZPD also probably made a backup of the Bellweather confession for evidence purposes, just in case Judy sat her fat ass on the recorder while waiting to go to trial.

I wonder what "the voiceline" is going to be for Z3...

In the second movie, he rewinds it (and it even plays a fake tape rewinding sound) to play the "dumb" sound bite over and over. So clearly it doesn't overwrite the previous recording until it runs out of space, and flash memory (before the AI thing) was super cheap. 512 Mb would let you record tons of shitty audio, and cost next to nothing.

Here it is, took a little bit. Animators are definitely morphing things to make the scene fit, 3D animation is quite literally 12 rats in a trench coat able to fit whatever needs to be filled.

This is extremely common in 3D animation. For example, in Monsters Inc, at the end where Boo goes to open her closet door, the animators actually scaled Boo up about 10% as she walked from the bed to the door. They did this so she could actually reach the door knob, but basically no one noticed or cared because it fits the scene.
