The same thing that happened to lighting and basically everything else about game graphics: Developers trying to use generic catch-all global systems to "set it and forget it" so to speak instead of actually going out of their way to craft these little illusions themselves using whatever smoke and mirrors and cheats they need to do make it work.
Not entirely their fault as HD game assets are a boring fucking pain in the ass to make and just getting them all in the scene already feels like it takes too long let alone adding any TLC touches, spend a week meticulously placing individual cobwebs and scuff marks in a virtual room but you have like 30 more rooms to do gotta get going deadline is on a month. (These rooms will only be seen by players for 5 minutes tops)

It's not that simple and more importantly, the way you do it is by basically rendering everything in that space twice, once for the room and once for the reflection. This is pretty resource intensive and not really worth the trouble unless you're going to have lots of mirrors in your game and it's something you want to show off. No game studio has an infinite budget so they have to prioritize what makes it in the game, and having working mirrors is very low on the priority list for the vast majority of games.

There are only two ways to make functioning mirrors. Either you create an identical yet reversed map on the other side of the mirror, with a mirrored version of the any characters that might be within its range, or ray-tracing. Ray-tracing is costly and you're not likely to see it on consoles or phone games.
As for why PC games don't have them, it's just laziness. Also, most eastern devs make their games for consoles and phones first, PCs second.

Not exactly, but in Warframe at some point reflective surfaces on one of the maps would show:
- Main menu with your frame doing that meditating pose
- Street from their previous game Darksector
it was hard to spot too. Idk about main menu thing, but people said that they just lazily reused the Darksector shader or whatever for reflections, which was something you knew they'd do.
Maybe I'm misremembering something though, it was more than a decade now

Couldn't have picked a worse example of how mirrors 'work' anon.
Both of those belong in the same category, absolutely shit. Neither are an attempt at making a mirror.
Left is for obvious reasons, and right for slightly less obvious reasons. The 'reflection' on the right should be angled down and mostly be covering the bed and the end.
The 'camera' would have to be approximately at the black spot to create the 'reflection' you see here.
Personally I prefer the lazy as fuck left picture to a bastardized reflection of an alternate reality in the right side.
