Both are cool, the original was inspired by a glitch so it has the fucked up colors and no water. All Stars has the uniqueness of getting to a castle underwater.

It might be "trivial," but so are most things discussed about retro games. I like All-Stars a ton, and don't particularly care about this change, it still looks fine in the new version. But I agree with OP that it removes the level's original soul. It's not as surreal as the left, and it loses the secret glitch world feeling. I wouldn't call right "soulless" though, as >>12360828 points out it's kinda cool in its own way.
