Remake works the exact same. The other games just have different systems. 4 wanted to go more story focused so it has the chapter system then all the characters come together at the end. 5 wanted to do a more solitary adventure so instead of humans you mostly use monsters. 6 and 7 wanted to focus heavily on classes, etc. 9 has a similar system of letting you just make a party out of whatever/whoever you want, but you have to unlock half the classes as the game goes on, whereas in 3 the only class you have to "unlock" is Sage.

No DQ story is particularly inventive or even that dramatic. The usual calls for best story are 5, 8, and 11. If you want the most customization 3 and 9 are your go to games. 7 probably has the most text in it to get lost in and the fans claim all kinds of shit, but I get filtered pretty hard by it so I can't comment beyond saying it's got a neat premise. If I had to hazard a guess for you I'd just say to play the GBC or SNES remake of 3, I think that's what you'd enjoy the most. Sparse story but fairly free roaming, very much an adventure in the classical sense.

1 through 4 were NES, 5/6 were SNES, 7 was PSX, 8 was PS2, 9 DS, 10 is an MMO on a bunch of shit, and 11 was PS4/Switch/PC. This is 7's second remake, and each time they tighten it up and remove stuff. The kid in the green cap isn't a dwarf he's just a kid, he is the main character.
