Yeah, if there's anything I came to realize from playing the FC remake, it's that the game's premise and foundation are rock solid, regardless of how old it is. SC is also poised to be great, especially given the remake will have fast travel. That'll improve the pacing tremendously.

It's a good remake because they haven't deviated from the original game design. The writing, level design and pacing are abysmal dogshit in all their post-2012 games. Best case scenario is they actually learn something from working with old game design and incorporate it into their new games.

Seems to have been a mixture of that and the main team being burned out on developing the Calvard arc.
I'm surprised they didn't take a long break after the Erebonian arc. CS and Reverie were an insanely mismanaged clusterfuck.

It's a mixture of Falcoms own hubris and their extremely fucked up production schedule.
After Cold Steel they thought they were too big to fail and that they didn't have to try that hard anymore because they figured the fanbase would just buy every game regardless. This obviously didn't turn out to be true because there was a huge drop off after Reverie as many people just got fed up with the series' bullshit and figured that was as good a place as any to call it quits.
Then you have the clusterfuck that was the development of their new engine. Daybreak 1 and 2 clearly were rushed while they were working on this engine and it shows. Daybreak 1 launched in an extremely fucked up state and had to be fixed post-release with massive patches and was lacking many series staples and Daybreak 2 was rushed into production when they had to delay Ys X so that entire game just feels like one big clusterfuck.
They didn't take a break from the series because they COULDN'T. They had nothing else even remotely ready for release at that time. Even though they really should have and you can see the effects of that decision everywhere in how undercooked much of the Calvard arc is.
