in fact both of those major ports imported and exported goods not just for themselves but for the major surrounding regions. the salonika is a gateway to the balkans and most importantly is not subject to the steep dardanelles tolls and turkish restrictions
what i'm saying is that salonika falling into irrelevance is purely down to greek mismanagement and not because of some immutable quality of the location. in fact it's a better location than antwerp, because antwerp has major competitors right next door: rotterdam and dunkirk, to name a few. salonika on the other hand, is peerless

Even if it's not to scale, seeing the pyramids or the dome of the rock really makes you feel more like you're in Egypt or Jerusalem. Like the graphic of the Theodosian walls and compact urban site of Constantinople really makes it feel more like the heavily defended metropolis it was, as opposed to just any other province.

History is full of the right people coming up at the right time and completely random events. If the caliphate or mongol or Frankish empire never existed, you'd be calling them absolute bullshit blobs if you saw a player with their borders in ck3. All it takes in history to make or break a kingdom is one bad or good ruler. GSGs would be extremely boring if they tried to be as historical as possible when it comes to borders, it'd always be the same thing. You can railroad it a bit with historical mechanics though. For example, Britain's geography making them prone to Norse invasions, or Iberia's location making the reconquista inevitable, or Rome being completely surrounded by enemies while infighting making their fall inevitable. Saying a game isn't historical because outcomes are different is very stupid and completely ignores what actually makes a game interesting

the main idea is to attack other nations and take all of their money to pay off the loans you took
if you're a small blob, invest in diplo rep / improve relations advisor to ally the big guys to do your wars for you. for peace terms, take all of their money of course and you would want to take center of trade provinces (trade company them if you can) and provinces that improve your forcelimit first (cattle) then manpower (wheat/fish/wine), you'll want this in order to wage more wars to collect your neighbourhood's money. that's about it really, you can virtually live off wars and not build a single economic building the entire campaign
if you're a big blob, you can skip most of the steps above and start trade companying everything downstream of your desired home node. for example as england, you would want to colonize the entirety of north america. portugal and spain benefit most from african and asian center of trades and sudacan colonies. russia from manifesting eastward and so on and so forth
if you're after gold province, convert its religion and dev its base production to 15
trade companies make you richer than fully coring a province, at 50% of the cost and only 10% of the trouble.
