Started training my hands referencing Wolff's law, currently using a single piece of cardboard covering cinder blocks. Averaging about 200 strikes (chain, straight, body punches) a day. I also use a grip resistance palm clench about the same amount of reps. Any other ideas how to strengthen the knuckles and joints? Curious about adding more calcium rich foods into my diet as well.

try press-ups where you point the fingers towards each other in the middle, and flip the hands over between each rep.
palms on the floor, middle finger tips not too far apart, lower your chest to your hands, then press up and use the momentum to lift your hands off the floor. flip the hands over so you land on the backs of your hands instead, and repeat, alternating. makes your wrists sturdy.
i'm not that gym-strong but my gym bro friends mire this cause they can't do it. they also mire being able to pull up on a doorframe. they can do way more pullups than i can on a bar, but can't do one when they need to grip with just the fingertips. try that too.
