I have time to learn one martial art. I'm in a large city, and they probably have at least one school if not multiple. I'd like something that'd allow me to hold my own in an unarmed one on one fight. What should I do?

Find a good MMA gym. You'll learn both stand up and grappling, which is what you need in the world today. You want to be able to fight on your feet and avoid having to grapple as much as possible. Grappling is nice, but if you're on the ground in a bar or on the street, somebody is going to try and soccer kick your head off while you're trying to land that rear naked on you opponent.
No MMA gym? Then find a good boxing gym.

Boxing is the perfect self-defense art
Effective, affordable, low skill floor, and you can find a boxing gym virtually everywhere
Kickboxing and Muay Thai are more effective, but sacrifice the simplicity and availability
Grappling in general - wrestling, bjj, judo, sambo - is extremely effective, but the skill floor is very high, you're looking at a significant time (and monetary, in some cases) investment before you can fight effectively

But that's not what being an effective grappler is - because you know one move that's applicable in one specific situation, and the moment your opponent does anything that even slightly deviates from it, you're screwed
It's like only knowing how to throw a left hook and calling yourself a boxer
