I've never been a frequent drinker (once every two weeks at most), but it used to be the case that getting drunk was always a great time. It didn't matter what I was doing, doing it while being a happily drunk idiot always enhanced the experience.
In recent years, though, I can only enjoy drinking if I'm really, really letting loose, getting loud and watching/doing something ridiculous. Watching the first half of Akiba Maid War while drunk was fantastic! Playing a video game while drunk, however, just feels annoying. It's more difficult to focus and concentrate, and it's simply less fun. If I don't find something to really laugh and get silly at, getting drunk at all feels like a waste, like I would've rather not bothered.
However, it's difficult to find something that's zany and over the top in just the right way to make drinking fun. It sucks. If I don't have something that hits the right note, then I feel like I've wasted my whole evening, as anything else I might do is noticeably less enjoyable due to the alcohol.
I'm not sure what I can do. I'd like to let loose and de-stress with alcohol on occasion, but I've only gotten drunk twice in the past six months because it's so difficult to ensure I have a good time. Heck, only one of those drunken evenings was fun, and the other one felt like a waste like I described before, as the show I planned to watch ended up being more serious than I expected.
Has anyone else struggled with this? What can I do?

From my experience alcohol doesn't do much against depression or stress. If the setting is shit, it won't make it better being drunk. What helps is stuff like drinking in company with friends, or being in a comfortable setting. Other stuff would be drinking it with sugar and caffein. Or use stuff like pregabalin in low doses, some do coke. But that would push you into addiction. So just make sure you already feel good, or drink with friends.

I think you may be right. I used to play VRChat or other online games when drunk, but I'm a dad now, and I have to stay quiet when I'm on my computer in order to not wake my kid. So that deprives me off the social component (I don't have IRL friends), and needing to be careful and quiet is antithetical to having a good time drinking. So that's why I've been needing particularly funny TV shows and the like to fill the gap. Hmm.

At this point I HAVE to drink with people or I'm gonna have a bad time. I might still have a bad time even if I'm with people. And not at like a bar setting that's depressing. On someone's couch with like a max of 6 other people.
If I do it by myself I just get sad.
