Nice selection of German beers OP, my country borders Germany but we don't have a big German selection unfortunately.
Recently, I did try two German beers however. No photos as I never remember to do so.
Weihenstephaner Korbinian, tastes malty, dark chocolate and coffee, slightly raisiny but not overbearingly so, would go nice with a non-sour dessert with e.g. chocolate or coffee, or for mains it would pair with a beef stew like a chili con carne or goulash I think.
Weihenstephaner Vitus, it was a bit disappointing for me as I had read raving reviews online. The beer had those clove and banana notes people were talking about, but I found the taste quite muted and the mouthfeel a bit flat. I would have liked more carbonation. But possibly I had a bad bottle as it underwent quite a few temperature changes traveling back to my country.

Tonight I will drink two beers, my favorite of all time, Orval, and then a new one for me, Boon Oude Geuze Mariage Parfait. I really like the barnyard funk and dry sourness that regular Boon Oude Geuze provides so I'm very curious to see whether this one will be the same but even better. No food pairings as I will drink them a few hours after dinner.

You have to try the kombine, its a beer made by St. Bernardus in colaboration with Weihenstephaner, incredible beer.

Not from the US but i think you can find any Belgian beer there.... Try big liquor stores or specialized beer shops.
Some nice Belgian beers would be the Trappist ones made by monks, great beers, my favourite is St. Bernardus 12, Delirium Tremens is also nice, Lambics are interesting, they taste more like wine.

You should be able to find Hoegaarden just about anywhere that sells beer, Gulden Draak if you're looking for something a bit nicee. Beyond that, what >>21849896. I am personally a big fan of Delirium in general, i opened a bottle of the Nocturnum with my friends on New Years to great enjoyment. There's also a few American breweries that make good Belgian ales.

My brother and I took a class about 8 years ago and we're part of a local homebrew club that meets monthly. Started with just some stuff we bought of craigslist and then we've collected more and more brew stuff that probably takes up 50% of my garage now.

We only give it away because it's not something you can sell. It makes us pretty popular for weddings and family events though.

That 5 gallon batch cost about $40. So it's way more cost effective. The brewing process takes about 4 hours and fermentation time can vary based on the style and yeast type.

My brother seems to think you need about 2 million to start a brewery. After watching craft breweries open then implode after COVID, I think there's success to be had in certain locations but it really is easier in urban areas and we live in kind of a rural one with three craft breweries within 20 mins. Part of my $25 yearly dues for the club is that we can serve at most of the local brewfests and drink for free, the only requirement is to bring 5 gallons. When you break down the costs though with travel and ingredients its kind of a wash but it is fun.

I would say my probably best exbeeriment so far was I've made a 12% thc beer. The club dubbed it "stuck on stupid" since one of the guys had to call out of work the next day after about 2oz. Definitely helped me quit smoking but if I have some too late in the day I'll wake up stoned.

We don't have a barrel to age in but I do like dark beers and it's something we want to try. Storage is the hard part but we have made some wine and I have a special two door freezer for aging it. We have two brew pots, 10g and 30g so we have considered it with a 30g but it'll pretty much take up all our storage space.

Depends i guess. If you come up with a new and original recipe that people like alot it might work out and you might be able to ship it everywhere.
Cool thing that you have beer clubs and such, we dont have that here as far as im aware.

12% alcohol right? Lol. Never tried thc beer but i would try it only if it had microdose amounts of THC, just a very slight buzz would be cool, getting both drunk and high with beer is kinda extreme for me.

There are some very small barrels i guess, but they have to be quality wood and preferably pre-used to age whiskey or cognac or something.
Its worth a try i guess but it could get quite expensive.
Maybe try making a barell aged icebock? That could actually sell for alot but it takes a long time and its very easy to mess it up. Making good beer is such an underappreciated art....

Yea 12% alcohol, I don't know the thc percentage but I used 2# for a 5 gallon batch but it's pretty strong.

I don't have an eisbock recipe but we have a two pretty good doppelbock or dunkelbock recipes. Thankfully two of the people in the club run the homebrew store in our town so we can get ingredients easily and we use a local free spring water that's low on EC content for every batch. I feel like the water is definitely the secret to great beer.

Depends on the beer style.... If you make something light bodied with low abv and low ibu yeah, water is probably the most important.
But if you make dunkels or stouts, ipas and such.... Than the taste will be too overpowering anyway so you wont feel that cleanliness that waters gives you.

Are most medal winning recipe is for a Mexican lager so I could see the water being important for those styles but I do feel like the spring water has a certain mineral content that adds to flavor, or horse piss since it's next to a pasture and we don't filter it. Just boil for an hour during the brewing.

I probably wouldn't use bottled water because you'd have no idea if it was chlorinated or not during the bottling process, a lot of bottled water is from public sources. If it was a glass container I would consider it but the cost of premium water would probably raise the cost of brewing too much because I typically need 10 gallons per batch and the spring water is free

Today I drank one Eschenbacher Märzen and one Fuller's ESB. Both for the first time, both were less bitter than expected, a good thing.

You kinda have to learn to like strong beer. Takes a while to get used to the overpowering alcohol taste and bitterness. After a while you dont taste those anymore and can only taste the good parts like the condiments, the malt and the other subtle notes.

Had a Schneider's Weisse Weizendoppelbock today.
Probably my favourite beer this month. Extremely fruity taste, vanilla, caramel, very creamy with alot of yeast residue.
Blows my mind that they can achieve this taste with only grain, hops and yeast.
5/5 beer.

I was at my friend's house a few days ago and the only thing he had in his fridge was a 16% Gordon beer. It tasted foul, I eventually ended up thinning it with water to make it more palatable and I had to make the last train home so I was forced to chug the last 1/3d.
