I am going to brothmog my mother tonight. She was going to use bullion cubes for her own batch, and when she sees my homemade broth made from the bones of the dead and the forgotten bubbling away in my cauldron (pot), I do not know how she will react. I added celery, carrots, onions, garlic, and paprika, as my mother and her father have done before me.
I will offer her this broth, and it would be within her rights as matriarch (and holder of the credit card) to claim it for her own soup. And that would be acceptable.
But if she does not accept the liquid amber I have had brought out of death, I am going to take all that dark meat and a little bit of wild rice, and I am going to have a very hearty midnight meal.

you should bake the carcasses before making stock, it helps with flavor and cracks the bones so you get into the marrow
low and slow, 275 for 2-4 hours
bake it with the vegetables, too
if you want a nice dark stock rub some tomato paste on the bones before you bake them

If you make the stock in a pressure cooker you don't have to skim it, something about the pressure pushes the impurities into the bone and you get a very nice, clear stock
If you're using a 15 bar pressure cooker it takes about 40 minutes to an hour, if you're using a 12 bar cooker it takes 120 to 145 minutes
I typically err on the shorter times because when you overcook a stock it will start to denature and get weird, I'd rather have a less rich stock than a watery, somewhat bitter stock

Paste, not sauce. Too much water in the sauce to get browning during the roasting process. Bare minimum you should be roasting the veg and carcass pieces. The tomato paste just gives it a deeper flavor when you do.

Dark meat is for the foxes/animals. Maybe even give it to a dog or use to make stock. Don't eat trash cuts. Have some self respect.
