I agreed with this for a long time but eventually you eat a cookie and you just realize most of the flavor is coming from the extract and it loses some of the delight. Vanilla being so much softer doesn't give you that same starkness of taste.

In most cases you'd notice if it wasn't used, I made a cake without vanilla extract and it tasted really eggy. I think that's the main use case making desserts not taste like eggs by masking the taste of eggs but not adding much of it's own flavour.
