I have never had greasy pho broth. Did you get greasier and fatty cuts? I usually stick to the leanest rare beef, nothing chewy or gummy like tougher tendon.

Also, if you found the aromatics too strong, you probably needed more toppings. More lime, more fish sauce, more basil and cilantro, I tell the kitchen extra onion and cilantro. Also, give a good dollop of hoisin on every bite of beef.
I honestly can't fathom anything tastier than a steaming bowl of pho soup on a cold day. The noodles are bland, mind you, rice noodles are like that, but I really love the stock. Hold back some of the bean spouts until the end. Get the nose running with more sliced chilies as you go.
