Buffalo Wings
02/02/26(Mon)21:37:50 No.21864502 I don't get it, so instead of using hotsauce, I drench the wings in extra mild sauce for white people with extra vinegar?
I even like regular Franks and XtraHot but this shit is garbage

all "wing hot sauces" are basically regular hot sauce emulsified with canola oil to get a "buttery" flavor and look. they are all awful. avoid at all costs.

Buffalo sauce in general is disgusting. They're are so many flavors that pair with wings. You know for a fact people don't like buffalo when they dip it in ranch to mask the flavor.

If you want to make it taste closer to some restaurant sauces, add some brown sugar and a shitload of butter. If you want it to taste hotter, add some pepper extract. Stop being such a helpless faggot who can't imagine how to improve a $3 bottle of hot sauce.

I tried Franks red hot when I went to the US of A, and I was disappointed. It's just acidic and spicy, no flavor. Tabasco at least tastes of something.

02/03/26(Tue)20:37:22 No.21866167 I made my own hot sauce last year. I grew habanero, cayenne, jalapeño, and Anaheim (Hatch). Fermented the mash for 2 months with 4% salt. Blended the fermented mash 1:1 with vinegar and a few spoonfuls of dried garlic. Result honestly tastes kind of similar to Frank's, just with more heat plus those fruity notes that habanero is known for.
Going to be starting seeds for this year's peppers in the next few weeks. Anyone have suggestions for other good peppers to grow for hot sauce?

Half gallon glass jars with an airlock lid. I'll use quart jars for smaller ferments but I had a lot of peppers at the end of the season that needed to be used before they started going bad.
