You'd be surprised. When I got down here to the place I live now, it's not a very well nown dish.
There's not alot, a half cup per 2lbs of ricotta. It helps it stay creamy even with the egg as an emulsifier

I think this was for a vegetarian friend's party I did Mexican stuffed shells stuffed with sauteed peppers, corn, black beans, you get the picture

I've never really liked stuffed shells. Or manicotti. Would prefer a lasagna. I don't really understand the point other than a slightly different pasta bake shell

You roast and peel and seed poblano peppers, you can include some jalapenos or serranos if you want it spicy, then blend them with a little milk, white onion, and garlic
Optionally you can also add cilantro stems to the blend
Then bring it to a simmer with cream cheese, and when it's all incorporated, you toss in some pasta to finish
Garnish with cilantro leaves and grated cotija cheese
If you can't find cotija parm or asiago will do, so will queso fresco, but a hard, dry cheese is better
It's really nice it's like cheesy Mexican pesto

Damn, that sounds pretty damn good. I'm gonna have to try that. I might swap out the milk for some crema though, and most likely put in either a couple of serranos and some anaheims. Have to keep the heat sparing since the wife and kids don't do spicy. Toss an asado seasoned piece of flank or hanger steak on the grill to go with it. I'm likin' this idea s lot. Thanks anon.
