Fair warning, the food.com copycat looks like garbage! Picture isn’t even appetizing.
Also, none of them suggest sweating the eggplant before frying but i know that’s what i did because I always do that. It helps reduce the potential for soggy texture.

The texture of soy crumbles or lentils is gross and not like beef! Eating a portobello between two pieces of bread is also bad texture and not like meat, it is not a good dish.
Eggplant Parmesan is goood, it’s a good use of that vegetable. Vegetarian lasagna would just use tomato sauce and not bolognese, are you an Italian with a stick up your ass about your mid dishes though?

simple old boiled cabbage with butter on it
Brussels sprouts in butter sauce
split pea soup, especially with big chunks of ham in it but it's good even without so it counts
roasted butternut squash or acorn squash with butter and brown sugar

There are lots of good things made with vegetables. "vegan" food isn't.

Good chain, I hope it grows and spreads. It's about a 40 mile round trip for me to go there, so I only go when I have to get some computer parts from the Microcenter that is sorta "near" it, like about 75% of the way to it.

Sounds good. At least there are some other good Middle Eastern places near me. There's one right near the house where I grew up, and I've loved their veggie combo since I was a kid, though now I have to ask them to substitute tahini for the tzatziki since I'm vegan. They also have something called a hummus shake, which is better than it sounds.

This. I am quite happy with a falafel plate. A lil scoop of silky and slightly smoky baba ghanouj eggplant dip with it, too.

One of my favorite pizzas is the Argentine-Italian creation of "Fugazzetta" with that hint of fresh oregano and all the oven-charred, impossibly thin shaved onions, and buttery cheeses. I have only had this in Miami.
