Cod roe's in season right now so I was wondering if I could make my own karashi mentaiko.
Anyone tried that before? There's surprisingly little information online on that. Guess most people buy it premade but you can't get that around here.
Supposedly it's made with salt, soy sauce, chili powder, sugar, and kombu.
Would shichimi togarashi be right for this? I also have gochugaru.
