So I have cubed moist beeff peppers and tortillas but what kind of base sauce should I use with all of these? Trying to cook more from home but my go to place uses a dark sauce

Dried chilis(seeds and stems removed) reconstituted in hot stock, add garlic then blender the shit out of it to a smooth consistency. Salt, cumin, coriander, whatever sounds good. A can of chipotles in adobo is good too. Adobo is just the mexican version of ketchup.
