What are you struggling with? Getting used to all of the moves? Because that takes quite some time. The issue with 3D games is that you don't just have to know your own move list, but you have to know what all the other characters do and their various strings so that you don't get immediately destroyed by gimmicks.

If you're more used to 2d games, then the neutral of 3D games can feel very different. For one, you jump way less than most 2d games. The focus is more on grounded steps. Particularly sidesteps in a lot of 3d games.
The neutral is much more close up than 2d games because you have far less meaningful options from range. Most characters don't have any kind of projectile attack in 3d. Your range comes from your normals. So you strike with a long distance kick in something like VF or DOA. Or in the case of Soulcaibur, a sword strike with long distance. It took me a while to wrap my head around that concept when I first began playing 3d games.

To answer your questions, it's best to use fast moves when up close that allow you to keep the opponent in check. Most people will not really fall for a fast high attack since they can be guarded or crouched, but they're still useful because you use them to interrupt other moves, given their fast startup. Lows are bet for when you need to start opening people up, but then mids are where you will get a lot of damage from if you've started to condition the opponent to guard low more. Which feels weird if you're used to 2d, as crouch guard is better in 2d, but riskier in 3d. It's better to stand guard in 3d, which is why lows serve a similar purpose in 3d that overheads do in 2d. So the general idea of what you'll want to do is something doing a fast move with either plus frames or string options, then going for a strike/throw as your basic mixup to start doing damage.

Slower moves with good range are good if you are actually at distance but I don't recommend using them up close unless you think the opponent is trying to escape with a backdash. Or in the case of if you think they'll sidestep, use moves with more tracking in the given direction you predict that an incoming sidestep will be going into.

I used to play Dead or Alive a good bit and I had to make a habit of building distance if I wanted to use slower moves that caused a guard break, plus frames, or were good for punishing whiffs and counterhit fishing. For a lack of a better comparison, think of it like projectiles in 2d games. Yes, a projectile is good from a distance, but you probably don't want to do a fireball right in the opponent's face, because they can just counter hit you during the startup and get a full combo.

From that range, you want to use a more appropriate option that will hit quickly. Using a slow, long range option up close is usually about as ineffective as using a fast, short range option from a distance. You can do it as a prediction, but it's not guaranteed to be all that useful.

Basically, in 3D games, there are a lot of defensive options to keep the offense from becoming overwhelming, but your job as the attacker is to overcome those defensive options and make good predictions to stop their defense from working. If you're just starting out, I recommend you to lean more towards offense than defense just so you can stop them from running away or starting their own attacks. Opponent likes to guard? Then don't be afraid to mix in more throws. The opponent likes to mash at disadvantage? Then punish them severely with counter hits.

Of course, at higher levels, you'll need to focus on defense more, with the primary goal of getting back onto offense as fast as possible. But for now, focus on attacking as best as you can. Fast, controlled strikes at close range. Stronger mids and long range plus frame strikes at mid to far range. And when you're at disadvantage, try to respect the opponent, but do something to get back on offense as fast as you can if you struggle on defense.
