I've always wondered how tasting notes work, are they just from the cupping, from the producer?most roasters ship their coffee before it's rested so how do they come up with the notes that may be there round 3-4weeks later when the coffee ''peaks''?

They do several sample roasts when they get greens to determine how the coffee should be roasted. They aren't just guessing roast profiles or roasting everything the same.

yeah I slipped into that for a bit and the results were varied. Huh I've been to a few cuppings, it was much more subtle than a dialed in cup. Tricky stuff but maybe my palate isn't developed

Do you guys also find that SL28 beans have a somewhat distinct aftertaste? I feel like I'm getting it with this type of bean from different roasters
Its a bit less noticable on the last bag that I bought, but I'm still not sure that I like it
